Beef Casserole (Serves 4)

(1 lb) 450 g lean beef
1 medium onion, chopped
(½ pint) 300 ml water
2 medium carrots, sliced
1 tablespoon vegetable oil
chopped parsley
1 pinch salt

Sauté the onion in the vegetable oil.
Add the beef and fry until brown.
Add the water and simmer until beef is almost cooked.
Add the carrots and simmer until carrots and meat are fully cooked.
Season with pepper and garnish with chopped parsley.

NOTE: the vegetables in this recipe provide ½ portion of vegetable per serving. If you are on a potassium restriction, you must include this as part of your daily vegetable allowance.
