Beef Recipes

1 lb (450 g) lean minced beefImage
1 small onion, finely chopped
1 teaspoon mixed herbs, finely chopped
freshly ground pepper
1 egg to bind

Mix together the minced beef, onion, mixed herbs and freshly ground pepper and beaten egg.

Divide the mixture into 4 large or 8 small equal portions and shape them into round, flat cakes. Grill for about 10 minutes on each side, pressing occasionally to extract any liquid.

1 medium onion, chopped
(½ pint) 300 ml water
2 medium carrots, sliced
1 tablespoon vegetable oil
pepper
chopped parsley
1 pinch salt

Sauté the onion in the vegetable oil.
Add the beef and fry until brown.
Add the water and simmer until beef is almost cooked.
Add the carrots and simmer until carrots and meat are fully cooked.
Season with pepper and garnish with chopped parsley.

NOTE: the vegetables in this recipe provide ½ portion of vegetable per serving. If you are on a potassium restriction, you must include this as part of your daily vegetable allowance.

1 lb (450 g) minced lean beef or lambImage
1 tablespoon polyunsaturated oil eg sunflower oil
1 small onion, finely chopped
1 clove garlic (optional)
½ oz (25 g) flour
½ pint (300 ml) water
ground black pepper
½ tin chopped tomatoes (200 g) drained
2 teaspoons basil (dried/fresh)

In a large saucepan, heat the oil and fry the onion until it turns golden.
Add in the mince and stir frequently. Fry briskly and drain the fat

Take the pan off the heat. Add the flour and half the water, drained tomatoes and the herbs.
Cover and simmer for about an hour or until the mince is tender. As the mince thickens add the rest of the liquid.
Allow to cool.

Pack and freeze in portion sizes. This can be used as a basis for shepherd’s pie (lamb), pasta dishes, cannelloni filling, or spaghetti bolognaise.
