Fishcakes (serves 4)

14 oz (400 g) cooked white fish
1 lb double/par boiled mashed potato (see potato dishes)
1 tablespoon chopped parsley
1 oz (25 g) margarine
black pepper
2 eggs
6 tablespoons white breadcrumbs
1 tablespoon vegetable oil

Flake the fish and mix with the mashed potato, parsley, melted margarine and black pepper.
Beat one egg and add to the micture, mixing well.
Divide into 12 portions and shape into flat rounds

Beat the second egg and dip each fishcake first into the egg, then into the breadcrumbs.
Heat the oil in a frying pan and fry the fishcakes on both sides over a medium heat.

NOTE: Each serving contains 1 portion of potato. If you are on a potassium restriction, you must include this as part of your daily allowance.
