Grilled Sole/Plaice/Salmon/Haddock/Cod with that “Special Something” (serves 4)

3 oz (75 g) butter
4 portions of fish of your choice 1 lb (450 g)
2 oz (50 g) plain flour
juice of 1 lemon
2 tablespoons parsley
1 teaspoon paprika pepper
1 clove garlic
seasoning

Dry the fish on kitchen paper and dip in flour, shaking off the surplus.
Melt half the butter and dip the fish in this. Place in a grill pan and cook under a moderate grill for 10-12 minutes, turning halfway through the cooking time. To make the “Special Something” heat the remaining butter in a small pan, add the lemon juice, parsley, paprika and garlic. Pour over the fish and serve.
