EACH SALAD IS EQUAL TO ONE PORTION OF FRUIT OR VEGETABLE

2 lettuce leaves
½ tomato or 2 cherry tomatoes
3 slices cucumber
1 slice onion ring or 1 slice beetroot
1 stick celery
½ apple, dice and mix with mustard and lemon juice or mayonnaise.
2 tablespoon mandarins
1 headed tablespoon grated carrot.
3 slices beetroot
2 tablespoon grated carrot.
2 lettuce leaves
3 rings green pepper
1 sprig watercress
1 spring onion
toss with french dressing.
2 tablespoon raw shredded cabbage
2 tablespoon raw shredded carrots
1 slice onion ring and a little mayonnaise or french dressing.
4 tablespoons olive/corn oil
2 tablespoons wine vinegar
1 tablespoon mustard power
pepper
pinch of sugar/1 teaspoon clear honey
garlic crushed

Put all the ingredients into a small screwtop jar and shake vigorously. Keep refrigerated and shake before use.
