Thatched Cod (serves 4)

1 oz (25 g) low fat mayonnaise
4 fillets of cod, 1 lb (450 g)
4 oz (100 g) onion chopped
2 oz (50 g) white bread crumbs
1 teaspoon chopped parsley or dill
1 lemon squeezed or grated

Melt ½ oz margarine, use a little of the margarine to grease the bottom of an oven proof dish. Arrange fillets in single layer and brush with mayonnaise. Fry onion lightly in remainder of margarine.
Combine with bread crumbs, parsley or dill, lemon rins and a little juice.
Spoon over fillets.
Cover and cook for 30-35 mins at 375°F 190°C.

Chicken can also be used for this recipe.

NOTE: The vegetables in this recipe provide 1 porion of vegetable per serving. If you are on a potassium restriction, you must include this as part of your daily vegetable allowance.
